Fresh (uncured)

Whole Share (aprx. 160/lbs) Fresh Pork (uncured) will include:

  • 6-8 Fresh Pork Roasts
  • 12-16 Pork Steaks
  • 35-40 Loin Chops
  • 2 Half Racks of spare ribs
  • Ground Pork aprx. 16/lbs (packed in 1/lb packages)
  • Pork Belly (aprx. 16/lbs… you will have several packages)
  • shank/feet/hock (about 8/lbs)

Cured:

Whole cured share (only the hams and bacon are cured) includes:

  • 4-6 Fresh Pork Roasts
  • 4 cured Hams… these are cured, but not cooked.
  • 12-16 Pork Steaks
  • 35-40 Loin Chops
  • 2 Half Racks of spare ribs
  • Sausage aprx. 16/lbs (packed in 1/lb packages)
  • Bacon (aprx. 16/lbs… it will be separated into aprx 1/lb packages… bacon will be sliced)
  • shank/feet/hock (about 8/lbs)

Cured meats will not be nitrate free, but even the nitrate free bacon at the store can have nitrates from the celery used that has nitrates in it… I did a little research…

Cured share: you will receive the same quantities of pork as the fresh shares, but the hams will be cured, the pork belly will be bacon, and the ground pork will be sausage. 

*You will need 8 cubic feet of freezer space.
